Chef Santiago Fernandez from MAZ is participating in the “EARTH MART”, one of the Signature Pavilions at the Osaka-Kansai Expo 2025, produced by Mr. Kundo Koyama.
He is developing dishes using five ingredients (koyadofu, daikon, wasabi, umeboshi, and wakame) from the “EARTH FOOD 25” list, which aims to share Japan’s traditional food culture and ideas and improve the future of the planet.
